Banana Heaven

Got rotten bananas? I just got this yummy recipe from allrecipes.com! It is so easy and so fluffy and yummy. Forget the banana bread. It takes forever to cook and these are just perfect for on the go or freezing! You can make 'em big or small. Ummm Ummm good! **(My sister-in-law added a little chocolate chips, vanilla and cinnamon to them and said they were great!)
Banana Muffins
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 large bananas (ripened)
3/4 cup white sugar
1 egg
1/3 cup butter, melted
Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 15 to 20 minutes. Muffins will spring back when lightly tapped.

These were great! Parker was downing them liked there was no tomorrow. Of course, I like 'em sweet (to disguise the banana taste) so I added a little cinnamon, vanilla & chocolate chips.MMMm.. They were so easy too! Thanks Kim - you're broadening my horizons!

I always like to sprinkle a little brown sugar on my banana bread so I tried it on these and it was great. Thanks Kim!
